Panzanella

Ingredients: slices of home-made stale bread, achovies, tomatoes, onion, basil, a spoon of vinegar and a spoon of olive oil, salt and pepper.

Directions:
Wet the bread with some water and put it on a plate. Put the chopped achovies on the bread. Peel off the skins of the tomatoes and take the seeds away, slice them and cover the bread with them. Mince the onion and the basil and put them on the tomatoes. Add salt and pepper to taste.
Emulsify the oil and the vinegar a put on the panzanella.
To be served fresh.
